Introduction: Autumn Butter Cookies

Here you have a simple and fun recipe to enjoy. It is autumn, the season of cosiness, mists and fallen leaves. Making cookies is a beautiful way to celebrate this wonderful season. These cookies are autumn/thanksgiving themed: there are mushrooms, pumpkins, apples... The best of it is that you can let your imagination flow and create new shapes with some tips that you will find below.

Supplies

Ingredients for the cookie dough

- 100g unsalted butter, softened to room temperature.

- 100g white sugar

- 250g sifted confectioner’s sugar

- 1 egg at room temperature

- 600g all-purpose flour

- a pinch of salt

Icing ingredients

- 340g confectioner’s sugar

- 2 egg whites

- Juice of half a lemon

- Food colouring

Step 1:

In a large bowl, beat the butter, the white sugar and the sifted confectioner’s sugar together on medium-high speed until smooth.

Step 2:

Add the egg (and if you want, you can add some vanilla extract too) and beat the mixture on until combined.

Step 3:

Now, add the flour and a pinch of salt while beating.

Step 4:

Roll the cookie dough into a log and wrap in parchment paper or plastic wrap. Aim for ½ cm thickness.

Step 5:

Refrigerate for at least an hour.

Step 6:

Cut the dough with cookie cutters. If you don’t have them, you can create them with a wire, as you can see in the photo.

Step 7:

Place the cookies evenly spaced on your prepared greased cookie sheets.

Step 8:

Bake in a preheated oven for 10-12 minutes at 180ºC.

Step 9:

Let the cookies cool completely.

Step 10:

For the icing, first, sift the confectioner's sugar in a bowl.

Step 11:

Then, add the white eggs into the bowl.

Step 12:

Mix the ingredients with a spoon and then add the lemon juice.

Step 13:

Beat the mixture on low speed for 6 minutes until stiff.

Step 14:

Separate the frosting in different bowls. (The number of bowls will depend on how many different colours you will need). In this recipe, the colours used are green (obtained by mixing blue and yellow colourant), brown (obtained by mixing red, yellow and a little bit of black), orange (red and yellow), red and black.

Step 15:

Fill the piping bag with the icing and draw whatever you want on the cookie. In this recipe, there are apples, leaves, pumpkins, mushrooms and pilgrim hats.

Step 16:

Once finished, let them dry completely.
